Air chilling suits EU and premium retail and avoids water uptake limits; immersion is cheaper and faster where permitted.
Ask for yield data and water consumption per bird in your regulatory regime.

Confirm the method your target market and certification body accept before pricing.
Hygiene and inspection compliance
Local meat inspection or EU approval dictates materials, drainage and layout, not only the machines.
