Liquid egg: how to specify chilled or frozen egg products

Short answer

Specify liquid egg by product (whole egg, yolk or white), treatment, chilled or frozen state, pack and destination documents. Codex expects a validated microbiocidal treatment such as pasteurisation, rapid cooling and refrigeration afterwards; untreated product should only go to further processing. In the US, pasteurised egg products must be safe to eat without further preparation.

What to put in the specification

Product
Whole egg, yolk, white or a blend; with or without added sugar or salt. State the solids content you need.
Treatment
Ask for a validated microbiocidal treatment, such as pasteurisation, and the validation record. Untreated product should only go to further processing.[1]
State and temperature
Chilled or frozen. Codex asks for pasteurised liquid egg to be cooled rapidly and kept refrigerated; write the exact temperature limit into the contract.[1]
Microbiology
EU microbiological criteria for egg products are in Regulation 2073/2005. Ask for a certificate of analysis per lot against the criteria your market applies.[4]
Pack
State the pack: bottles, bag-in-box, totes or tankers. Suppliers state ranges such as 1 litre to 1 tonne.
Shelf life
Supplier-stated for each product and storage temperature; one exporter states up to 15 months frozen. Ask for it in the specification.

Veterinary and food-safety documents

Health certificate
Great Britain requires one for EU egg products kept chilled or frozen (medium risk). Canada requires a government certificate; US certificates are digital (FSIS form 9060-5EP) from 19 September 2026. Singapore requires one per consignment.[14, 15, 18, 22]
Approved source
Singapore accepts processed eggs only from SFA-approved sources; the EU and others list eligible origins and establishments.[22, 6]
Heat treatment conditions
Singapore requires heat treatment, freedom from pathogenic micro-organisms (especially Salmonella) and an HPAI-free origin or a treatment that inactivates avian influenza.[24]

Storage and transport

Cold chain
Egg products should be stored and transported under conditions that do not affect their safety. Agree a temperature log and a rejection limit for each load.[1]

Country-specific caveats

Great Britain
Chilled or frozen egg products from the EU are medium risk; other egg products are low risk with a commercial document.[14]
Canada
Processed egg products need an import permit and fall under tariff-rate quotas; the label must say 'Product of' plus the origin.[18, 20]
United States
Pasteurised egg products must be edible without additional preparation.[11]

Questions buyers ask

Does liquid egg have to be pasteurised?
Codex expects a validated treatment such as pasteurisation for products sold as safe; untreated product should only go to further processing. In the US, pasteurised egg products must be edible without further preparation.
Should I buy chilled or frozen liquid egg?
It depends on distance and use. Chilled suits short routes and fast use; frozen suits longer transport. Agree the temperature and shelf life in the specification.
What documents does liquid egg need for Great Britain?
EU egg products kept chilled or frozen need a health certificate and an IPAFFS notification at least one working day before arrival.
Who buys liquid egg?
Bakeries, foodservice and food manufacturers. Several exporters on the trade map name these buyers on their own pages.

Send a structured egg sourcing request

The request form asks for the points below, so have them ready:

  1. Product and form: shell table eggs, liquid, frozen or dried
  2. Specification: grade and weight class, or product type and treatment
  3. Production-system claim and the certificate that proves it
  4. Volume, frequency and pack
  5. Destination, delivery point and Incoterm
  6. Documents the destination requires

Requests start at USD 250,000 total requested value — an annual programme, a season or a single lot.

The buyer service is free. Every brief gets human review and trade checks, then the HatchMatch team contacts suitable suppliers on your behalf; there is no direct buyer–supplier contact. HatchMatch aims to reply within two business days and does not promise supplier responses, stock or prices.
