Egg powder: how to specify dried whole egg, yolk and albumen
Short answer
Specify egg powder by type (whole egg, yolk or albumen), the function you need, treatment, moisture and microbiology limits, pack and documents. Dried whole egg and yolk use HS 0408.11 and 0408.91; dried albumen uses 3502.11. Shelf life is supplier-stated: exporters state between 12 and 36 months depending on product and storage.

What to put in the specification
- Type
- Whole egg, yolk or albumen powder; for albumen, the function such as high gel or high whip.
- Treatment
- Ask for a validated microbiocidal treatment and how it was applied (before drying or to the dry powder).[1]
- Microbiology
- Ask for a certificate of analysis per lot against the criteria your market applies; EU criteria for egg products are in Regulation 2073/2005.[4]
- Pack
- Lined cartons or bags; one exporter's specification lists 5 to 25 kg packs.
- Shelf life
- Supplier-stated: examples include 12 months below 25°C, 18 months for whole-egg and yolk powder, 24 months for an albumen isolate and 36 months for high-gel albumen. Get the figure for your product in writing.
Veterinary and food-safety documents
- Health certificate or commercial document
- Great Britain treats EU egg products that are not chilled or frozen as low risk: commercial document, no health certificate. Confirm the category for your commodity code.[14, 15]
- Approved source and conditions
- Singapore requires an SFA-approved source, a health certificate, heat treatment and freedom from pathogenic micro-organisms.[22, 24]
- Canada
- Processed egg products need a government certificate and an import permit.[18]
Storage and transport
- Storage
- Egg products should be stored and transported under conditions that do not affect safety. Write the storage temperature and humidity limits into the specification.[1]
Country-specific caveats
- Great Britain
- Low-risk egg products still need an IPAFFS notification and can face intelligence-led checks.[15]
